The one-line rule: camera-AI is strong on "is the person gowned and where they should be," weak on anything small on the body, and blind to what's inside the food. Anyone selling you cameras as "contamination detection" is overselling. Real in-product safety is inline vision, metal detection, X-ray and lab testing — cameras sit around that system, watching the people.
Where cameras pay for themselves in Indian food factories
Not fines. The payback is commercial:
- Passing buyer audits without a scramble. Retail chains and exporters run announced and unannounced audits. A gowning/handwash log with timestamped evidence shortens the audit and reduces the "corrective action" list that can hold up a purchase order.

- Draw zones deliberately. A gown is mandatory past the packing-hall line, noise elsewhere — the same bare head is a violation inside one painted box and a false alarm two metres away. Wrong zones = an alarm every minute until someone mutes it.
- Plan for the environment: steam, wash-down, cold rooms and glare all degrade detection. Cameras need appropriate ingress protection and the AI needs testing under your light, not a demo hall's.
